Grill Time

Time to fire up the grill. Food for the upcoming week and more. Chicken, pork chops, corn, baked potato’s, t-bone steaks and more!!

Dessert was no sugar lemon creme cake, topped with low calorie, low sugar vanilla ice cream with fresh strawberries mixed in. After all that I’m ready for a nap!!

Cold Day in Alpine

Woke up this morning with 17 degree temps. Sun came out but never got above 27 degrees. Well what a perfect day to fire up the grill…

Chicken Fajitas on the grill…Mmmm good

I cooked the marinated chicken directly on the grill over hickory wood. Once it was done I cut it up in pieces and put in cast iron skillet with onions, and peppers. Served sizzling with rice, tortillas, and hot sauce. It was tasty with plenty of leftovers.

Steaks from Sul Ross College

We went to the Sul Ross retail meat counter today and tried some of their meat. We got a couple of butterfly pork chops and two New York Strip steaks.

Before we left I had to make a tough decision. Take my big offset smoker that I really love or leave it and get something more in size with traveling with it in the motor home. Well you can see what happened… Justin, my youngest son is now the owner of my smoker and I have a much more manageable Weber Grill.

I have already grilled some steaks, burgers, and more. Most recently some chicken legs on my drumstick holder. This holder makes the best chicken legs and thighs. It really grills them evenly without them ever touching the grill. Check it out HERE.

The new Weber is nice and one of the advantages it uses less charcoal. It holds the heat in very well. I’m really impressed on how well made it is. Easy to put together and I bought a cover to keep it looking great for a long time. Bottom line: I like it!!
