Grilling Bacon

We love bacon but usually don’t buy it because its just too expensive, and messy to cook inside. Finally fired the grill up between rain showers and found a great little store-McClains in Shepherd, Tx . This store, only 10 minutes away just celebrated their 109th birthday and had bacon on sale for $2.50 a pound so we bought about 3 lbs.

It cooked up great and just added to a couple of eggs in the mornings. Made some good sandwiches also. These pictures make you hungry just looking at them!!

It took a while to get our motorhome in between all the trees. Nice park with huge trees, swimming pool, and small lake to fish in. Only 4 minutes from our gate. We will start on Monday. A lot of the workers are here at the RV park also. We got it “made in the shade”.

Grill Time

Time to fire up the grill. Food for the upcoming week and more. Chicken, pork chops, corn, baked potato’s, t-bone steaks and more!!

Start with some fresh sweet corn
Jalapeno Chicken, baked potato’s, and the corn.
After that is done, more chicken with some secret sauce
Secret no more, brush this on right before they were done.
Now, lets do some pig.

Dessert was no sugar lemon creme cake, topped with low calorie, low sugar vanilla ice cream with fresh strawberries mixed in. After all that I’m ready for a nap!!
Life is GOOD!!

Cold Day in Alpine

Woke up this morning with 17 degree temps. Sun came out but never got above 27 degrees. Well what a perfect day to fire up the grill…

Chicken Fajitas on the grill…Mmmm good

I cooked the marinated chicken directly on the grill over hickory wood. Once it was done I cut it up in pieces and put in cast iron skillet with onions, and peppers. Served sizzling with rice, tortillas, and hot sauce. It was tasty with plenty of leftovers.

Steaks from Sul Ross College

We went to the Sul Ross retail meat counter today and tried some of their meat. We got a couple of butterfly pork chops and two New York Strip steaks.

The store is run by the students and prices are very reasonable.
